A master of flavours, his compositions create an incredibly light and perfect cuisine – delicate, intense, full-flavoured and delicious at the same time. Sommelier Stéphane Gass pairs each course with a subtle wine from Traube's outstanding cellar.
The restaurant is closed from 13th January up to and including 4th February 2014, and from 4th August up to and including 28th August 2014.
The Schwarzwaldstube is open from Wednesday evening to Sunday evening from 12 noon and 7pm and closed on Monday and Tuesday.
