A master of flavours, his compositions create an incredibly light and perfect cuisine – delicate, intense, full-flavoured and delicious at the same time. Sommelier Stéphane Gass pairs each course with a subtle wine from Traube's outstanding cellar.
Please note, that our gourmet restaurant Schwarzwaldstube is opened from Wednesday evening to Sunday evening and closed on Monday and Tuesday.
Our annual holidays in 2017 will be from 9th January up to and including 2nd Februrary and will be opened again from 3rd February for dinner. Furthermore, the Schwarzwaldstube will be closed from Monday, 31st July on and will be opened again on 25th August for dinner.
