A master of flavours, his compositions create an incredibly light and perfect cuisine – delicate, intense, full-flavoured and delicious at the same time. Sommelier Stéphane Gass pairs each course with a subtle wine from Traube's outstanding cellar.
Please note, that our gourmet restaurant Schwarzwaldstube is opened from Wednesday evening to Sunday evening and closed on Monday and Tuesday. We appreciate your understanding that due to the new German Labour Protection Act our restaurant is opened from 12 p.m. to 4:30 p.m. and from 7 p.m. to 12 a.m. After your meal we would like to pamper you in our hotel foyer and bar.
In 2016 the Schwarzwaldstube will be closed from 11th January up to and including 4th February. Furthermore our gourmet restaurant will be closed from 1st August up to and including 25th August for annual holidays. The restaurant will be opened again from 26th August for dinner.
