A master of flavours, his compositions create an incredibly light and perfect cuisine – delicate, intense, full-flavoured and delicious at the same time. Sommelier Stéphane Gass pairs each course with a subtle wine from Traube's outstanding cellar.
Please note, that our gourmet restaurant Schwarzwaldstube is opened from Wednesday evening to Sunday evening and closed on Monday and Tuesday. We appreciate your understanding that due to the new German Labour Protection Act our restaurant is opened from 12 p.m. to 4:30 p.m. and from 7 p.m. to 12 a.m. After your meal we would like to pamper you in our hotel foyer and bar.
In 2015 the restaurant is closed from 12th January up to and including 1st February and from 3rd August up to an including 27th August. Please don't hesitate to contact us if you want to know our opening hours during the Christmas and New Year period.
